The chef Enrique Olvera talks about Mexican food worldwide and the importance of producers in Mexican gastronomy culture. Mexican cuisine is listed by UNESCO as part of the Intangible Heritage of Humanity. The combination of the rich biodiversity of Mexico with the ancient traditions of indigenous cultures, the influences of the ingredients of European cultures, mainly Spanish during the Colony, as well as traces of other cuisines such as Chinese, Arab and Afro-descendant cuisine, among others have allowed the evolution and growth of the gastronomy of this Latinamerican country.
